SWEET POTATO WEDGES

Extra crispy sweet potato wedges topped with grated Parmesan cheese and fresh parsley

Sweet Potato Wedges Recipe
​
Ingredients
​
4-5 Large sweet potatoes, sliced into wedge shapes and boiled (not too soft)
1 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1/2 tsp cayenne pepper
Handful Parmesan, greated
Handful fresh parsley, finely chopped
Salt and pepper, to taste

Method
​
Pat dry with tea towel and a bowl mix all ingredients apart from the Parmesan with the sweet potatoes until fully coated
Add in the parmesan and coat the potatoes
Space them out onto a oven tray
Roast them for 40-45 minutes, turning half way
Serve them with sprinkled on fresh parsley.
