CREAMY RED PESTO FUSSILI

Creamy cheese and tomato pesto pasta in one pan




This is my go-to favourite evening meal that I make every night, Monday through Friday, for me and my partner. This recipe is so simple yet tastes like a restaurant meal; it's perfect if you need a quick evening meal. This will be your favourite pasta dish, I promise.


INGREDIENTS

(Meal for one)

  • 80g-100g fussili

  • Olive oil for frying

  • 3-4 garlic cloves, grated

  • 1/2 cup double cream

  • 1 Tbsp tomato paste

  • 1 tsp red pesto

  • 2 tsp grated Parmesan

  • 1 tsp oregano

  • 1 tsp Italian seasoning

  • 1/2 tsp chilli flakes

  • 1/2 tsp cayenne pepper

  • Salt & pepper, to taste

  • 1/3 cup pasta water


METHOD


  • Boil the fusili pasta until desired.

  • While the fussili is boiling, heat the oil in a pan.

  • Slightly fry the garlic and chilli flakes.

  • Stir in the tomato pasta and red pesto in the pan.

  • Add in double cream and Parmesan, and stir

  • Stir in the remaining seasonings.

  • When the pasta is done, add the pasta water to the sauce.

  • Drain the pasta and add it to the sauce-filled pan.

  • Serve with cracked black pepper and grated Parmesan (optional).
