Creamy cheese and tomato pesto pasta in one pan
This is my go-to favourite evening meal that I make every night, Monday through Friday, for me and my partner. This recipe is so simple yet tastes like a restaurant meal; it's perfect if you need a quick evening meal. This will be your favourite pasta dish, I promise.
INGREDIENTS
(Meal for one)
80g-100g fussili
Olive oil for frying
3-4 garlic cloves, grated
1/2 cup double cream
1 Tbsp tomato paste
1 tsp red pesto
2 tsp grated Parmesan
1 tsp oregano
1 tsp Italian seasoning
1/2 tsp chilli flakes
1/2 tsp cayenne pepper
Salt & pepper, to taste
1/3 cup pasta water
METHOD
Boil the fusili pasta until desired.
While the fussili is boiling, heat the oil in a pan.
Slightly fry the garlic and chilli flakes.
Stir in the tomato pasta and red pesto in the pan.
Add in double cream and Parmesan, and stir
Stir in the remaining seasonings.
When the pasta is done, add the pasta water to the sauce.
Drain the pasta and add it to the sauce-filled pan.
Serve with cracked black pepper and grated Parmesan (optional).
