VANILLA CAKE POPS

Cake pops with a gooey center, topped with sweet white chocolate and birthday sprinkles.



Cake pops that are simple and easy to make, ideal for a last-minute birthday treat.

Recipes for Vanilla Cake Pops

Ingredients

  • Full tub of vanilla buttercream (400 g)

  • 1 2/3 cups plain flour, sieved

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon bicarbonate of soda

  • Sprinkle of salt

  • 1/2 cup unsalted butter

  • 1 cup granulated sugar

  • 1 egg

  • 2 teaspoons vanilla essence

  • 1 cup whole milk

  • 1 cup white chocolate, melted, for topping

  • Sprinkles for topping

Method

  1. Preheat the oven to 180°F.

  2. In a bowl, combine the flour, baking powder, bicarbonate of soda, and salt.

  3. Using a standing mixer, beat the butter and granulated sugar until the texture is creamed.

  4. Add the vanilla essence and egg; beat this together on high speed, making sure to scrape down the sides.

  5. Place the mixer on a low speed setting and add in the milk and dry ingredients, mixing until fully combined with no lumps.

  6. The batter should be quite thick, so using a spoon, scrape the mixture into an oven dish lined with baking paper.

  7. Bake the batter in the oven for 30 to 35 minutes; a toothpick should come out clean.

  8. Allow the cake to completely cool.

  9. Crumble the cooled cake into a large bowl, mixing it in with the ready-made frosting (you can make your own frosting, but for this simple recipe I've used store-bought).

  10. Roll the cake mixture into ball shapes of your choice, and line these out onto a tray lined with baking paper.

  11. Place the cake ball-filled tray into the freezer for 1–2 hours.

  12. Using the melted chocolate, place the end of the stick into the chocolate, sticking it slightly into the cake ball. Put the cake ball into the fridge for a further 20 minutes.

  13. Coat the cake balls, removing a couple at a time so the cake stays cool.

  14. After decorating, place in the fridge for 30 minutes to an hour to set.
