SWEET POTATO AND HALLOUMI BRIOCHE
 

A toasted brioche bun filled with crispy sweet potatoes, grilled halloumi, and sweet chilli sauce

Sweet potatoes are high in fibre and antioxidants, which protect your body from free radical damage and promote a healthy gut and brain. They are also incredibly rich in beta-carotene, which is converted to vitamin A to support good vision and your immune system.

Originally from Cyprus, halloumi cheese is a popular dairy product. Its firm texture and unique savoury taste are enjoyed worldwide. Given that it provides a good amount of protein and calcium in each serving, adding it to your diet may enhance your bone health and protect against type 2 diabetes.

So what a perfect combination, all filled into a sweet brioche bun!

Sweet Potato Recipe

Ingredients

  • 1 Sweet potato, peeled and sliced into thick chunks

  • 1 tbsp olive oil

  • 1 tsp honey

  • 1/2 tsp cinnamon

  • 1/2 tsp garlic powder

  • 1 tsp sweet chilli

  • 1/2 tsp smoked paprika

  • Salt and pepper, to taste

Method

  1. Preheat oven to 180 degrees

  2. Boil sweet potatoes until softened then drain

  3. Place all ingredients into a bowl with the sweet potatoes to coat them

  4. Place on a baking tray the sweet potatoes for 25-30 minutes, turning halfway

Halloumi Recipe

Ingredients

  • 1 thick slice Halloumi 

  • Olive oil, for frying

  • *Do not add any salt to the Halloumi, it is salty enough*

Method

  1. Heat oil in pan

  2. Fry the Halloumi on both sides until fully grilled and cooked through

Assembling the bun

  1. Warm the bun in the oven for 5 minutes or until desired warmness

  2. Place the sweet potatoes inside the bun, following with the sliced Halloumi

  3. Drizzle sweet chilli sauce into the bap and serve
