COCONUT MACAROONS

Sweet crispy but soft coconut macaroons

These coconut macaroons are so crispy on the outside yet so soft and chewy on the inside. The sweetness of the macaroons is light but delicious; you'll want to eat the entire batch.


Ingredients


  • 2 eggs whites

  • 80g caster sugar

  • 200g desiccated coconut

  • 1tsp vanilla essence

  • A pinch of salt

  • White chocolate (optional)


Method


  1. Mix together the egg whites and caster sugar with an electric mixer or whisk in a large bowl for 2-3 minutes until it looks light and frothy and the sugar has dissolved.

  2. Add the coconut, salt, and vanilla, then stir until combined.

  3. Allow for a 10-minute resting period.

  4. Preheat the oven to 170 degrees.

  5. Line a baking sheet with baking paper.

  6. Using an ice cream scoop, scoop the mixture and then round it into balls.

  7. Place the macaroons on the baking sheet and bake for 15 minutes.

If using chocolate, melt it and drizzle it over the macaroons.
