PATATAS BRAVAS

Spicy potatoes topped with a sweet spicy tomato sauce.

To be bravas, the patatas must be served with a sauce that makes them “brave”.

Potato Recipe

Ingredients

  • 5-6 baby potatoes, sliced into small chunks

  • 1/2 tsp garlic powder

  • 1/2 tsp cayenne pepper powder

  • Sprinkle chilli flakes

  • 1/2 tsp smoked paprika

  • 1 tbsp Olive oil

  • Salt and pepper, to taste

Method

  1. Preheat oven to 200 degrees

  2. In a bowl mix all ingredients until potatoes are fully coated

  3. Place potatoes onto oven tray and roast for 30-35 minutes until crispy.

Patatas Bravas Sauce Recipe

Ingredients

  • Oil, for frying

  • 1/2 cup cherry tomatoes

  • 1 tbsp tomato puree

  • Pinch of caster sugar

  • 1/2 tsp chilli powder

  • 1/2 tsp paprika

  • 2 garlic cloves, crushed

  • 1/4 cup double cream

  • 1 white onion, finely chopped

  • Handful parsley, for garnish

Method

  1. Heat the oil in a pan

  2. Fry the onion for about 5 mins until softened.

  3. Add in the rest of the ingredients then bring it to the boil, stirring occasionally.

  4. Lower to a simmer and cook for 10 mins.

Serving

  1. Dish out the potatoes

  2. Place the sauce on to the top of the potatoes

  3. Garnish with parsley
