PATATAS BRAVAS

Spicy potatoes topped with a sweet spicy tomato sauce.
​
To be bravas, the patatas must be served with a sauce that makes them “brave”.

Potato Recipe

Ingredients

5-6 baby potatoes, sliced into small chunks

1/2 tsp garlic powder
-
1/2 tsp cayenne pepper powder
-
Sprinkle chilli flakes
-
1/2 tsp smoked paprika
-
1 tbsp Olive oil
-
Salt and pepper, to taste

Method

Preheat oven to 200 degrees
-
In a bowl mix all ingredients until potatoes are fully coated

Place potatoes onto oven tray and roast for 30-35 minutes until crispy.

Patatas Bravas Sauce Recipe

Ingredients
​

Oil, for frying
-
1/2 cup cherry tomatoes
-
1 tbsp tomato puree
-
Pinch of caster sugar
-
1/2 tsp chilli powder
-
1/2 tsp paprika
-
2 garlic cloves, crushed
-
1/4 cup double cream
-
1 white onion, finely chopped
-
Handful parsley, for garnish

Method

Heat the oil in a pan
-
Fry the onion for about 5 mins until softened.
-
Add in the rest of the ingredients then bring it to the boil, stirring occasionally.

Lower to a simmer and cook for 10 mins.

Serving

Dish out the potatoes
-
Place the sauce on to the top of the potatoes
-
Garnish with parsley
