Buttery sliced Hassle back style potatoes topped with fresh roasted garlic and chopped parsley.

Method

  • Preheat oven to 200 degrees

  • Using two wooden sticks hold down the potatoes

  • Place on a chopping board, slice through the potato (without slicing all the way through)

  • In a bowl toss garlic, rosemary, chilli flakes, salt and pepper

  • Place the potatoes sliced-side up onto an oven tray

  • Brush the potatoes with the oil and seasonings

  •  Roast the potatoes for 1 hour - 1 hour 10 minutes until the potatoes are tender throughout and the tops are golden and crisp. 

  • Coat with a thin layer of butter.
