Buttery sliced Hassle back style potatoes topped with fresh roasted garlic and chopped parsley.

Hassle-back Potatoes Recipe

Ingredients

- 
4 tbsp olive oil 
- 
5 garlic cloves, crushed 
- 
1 tsp chilli flakes 
- 
1 tbsp rosemary 
- 
Parsley, finely chopped 
- 
Salt and pepper, to taste 
- 
1 tbsp unsalted butter, to serve

Method

- 
Preheat oven to 200 degrees 
- 
Using two wooden sticks hold down the potatoes 
- 
Place on a chopping board, slice through the potato (without slicing all the way through) 
- 
In a bowl toss garlic, rosemary, chilli flakes, salt and pepper 
- 
Place the potatoes sliced-side up onto an oven tray 
- 
Brush the potatoes with the oil and seasonings 
- 
Roast the potatoes for 1 hour - 1 hour 10 minutes until the potatoes are tender throughout and the tops are golden and crisp. 
- 
Coat with a thin layer of butter.
