CRANBERRY AND GOATS CHEESE TOPPED BRUCHETTA

Mini crispy bruchetta topped with smooth Goats cheese, walnuts and sweet cranberries

I made this vibrant recipe for a Fairy themed party i planned and it turned out great, it was fun to make something a little classy and full of flavour

I also made caramelized onion topped bruchetta, these turned out great too.

 

Goats cheese filling recipe

 

Ingredients

  • 30 mini bruchettas

  • 1 full goats cheese log

  • 1/4 cup dried cranberries, chopped

  • 1/4 cups walnuts, chopped finely

  • 3 Tbsp. honey

  • 1 Tbsp fresh rosemary leaves, chopped finely

Method

  1. In a bowl combine all the ingredients, apart from the bruchetta and place in the fridge for 30 minutes to 1 hour

  2. Set out the bruchetta and spread using a spoon the goats cheese mixture onto each bruchetta (only one side)

  3. Drizzle honey onto the top of the bruchetta and serve.
