CRANBERRY AND GOATS CHEESE TOPPED BRUCHETTA

Mini crispy bruchetta topped with smooth Goats cheese, walnuts and sweet cranberries

I made this vibrant recipe for a Fairy themed party i planned and it turned out great, it was fun to make something a little classy and full of flavour
​
I also made caramelized onion topped bruchetta, these turned out great too.
Goats cheese filling recipe
Ingredients

- 
30 mini bruchettas 
- 
1 full goats cheese log 
- 
1/4 cup dried cranberries, chopped 
- 
1/4 cups walnuts, chopped finely 
- 
3 Tbsp. honey 
- 
1 Tbsp fresh rosemary leaves, chopped finely

Method

- 
In a bowl combine all the ingredients, apart from the bruchetta and place in the fridge for 30 minutes to 1 hour 
- 
Set out the bruchetta and spread using a spoon the goats cheese mixture onto each bruchetta (only one side) 
- 
Drizzle honey onto the top of the bruchetta and serve.
