Coconut Macaroons
 

These coconut macaroons are so crispy on the outside yet so soft and chewy on the inside. The sweetness of the macaroons are light but delicious, you'll be wanting to eat the entire batch.

 

Coconut Macaroon Recipe

Ingredients

 

  • 2 eggs whites

  • 80g caster sugar

  • 200g desiccated coconut

  • 1tsp vanilla essence

  • A pinch of salt

  • White chocolate (optional)

 

Method

 

  1. Mix together the egg whites and caster sugar wifh an electric mixer or whisk in a large bowl for 2-3 mins until the it looks light and frothy, and the sugar has dissolved.

  2. Add the coconut, salt and the vanilla, then stir until combined.

  3. Leave to stand for 10 mins

  4. Preheat the oven to 170 degrees.

  5. Line a baking sheet with baking paper.

  6. Using an ice cream scoop- scoop the mixture then round it into balls

  7. Place the macaroons onto the baking sheet, bake for 15 minutes.
