BLACKBERRY CINNAMON OAT COOKIES

For this delicious recipe I handpicked my blackberries from a forest near by. The sweet berries mixed with the oats and spiced cinnamon make such a great combination it's almost impossible to resist. And they are also healthier than many other cookies, that's if you don't eat the whole batch...

 

Blackberry Cinnamon Oat Cookie Recipe

Ingredients

 

  • 2 Ripe bananas

  • 1 Cup rolled oats

  • 1 tsp cinnamon powder

 

Ingredients for Blackberries

 

  • 1 Tbsp Sugar

  • 1 Cup Blackberries, washed

 

 

Method

 

  • Preheat the oven to 200 degrees and line a baking sheet with parchment paper.

  • Place blackberries in a medium bowl, sprinkle with granulated sugar and toss to coat then let them sit for a whole hour until the blackberries release their juices.

  • Drain blackberries and reserve the juice for future recipes (entirely up to you.)

  • In a bowl mash the bananas with a fork.

  • Add the rolled oats, blackberries,cinnamon and mix well.

  • Take spoonfuls of the mixture and shape into cookie shapes.(They won’t change their shape while baking, so make sure you shape them to your liking.)

  • Place them on the baking sheet and bake for 15-20 minutes, or until golden.

  • Serve the cookies warm or completely cool for a crispier texture.
